做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖焖。
