做法(fǎ ):春(chūn )笋切成片后加少许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
