做法:春笋切(qiē )成片后加少(shǎo )许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
