做法:春笋切成片后加(jiā )少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候(hòu )加(jiā )入(rù )盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅(guō )盖焖。
