做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入(rù )2勺油,放入(rù )生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分(fèn )钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
