做法(fǎ ):春笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入(rù )生抽、老抽、蚝油翻炒均(jun1 )匀,加(jiā )入少(shǎo )量清水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
